Long time no post! I filmed a Video and thought I’d share some of the recipes I made. I’m Always looking for new ideas so hopefully this will inspire you as well!
Jalapeño Poppers
This is as close as I can estimate as to what I put in mine. It varies each time. 😃
▢ 8 oz cream cheese
▢ 8 oz grated cheese (I used Parmesan and a Colby Jack but feel free to use whatever you prefer )
▢ 1 tsp garlic powder & a little onion powder
▢ 1/4 cup sour cream
▢ salt - to taste
▢ cracked black pepper - to taste
▢ 12 large jalapeños
▢ 12 bacon slices (pre-smoke them. Don’t cook them too long. Because they won’t wrap around the jalepeño then)
▢ cooking spray
I bake them at 400 for 15 minutes give or take. Might take longer or less time depending on your oven. If you want to smoke them on a smoker that would be great too!
Chicken Taco Soup:
I made this in my crockpot. I put in
▢ 6-8 boneless skinless chicken tenderloins (frozen).
▢ 1 pouch taco seasoning & some garlic powder, cumin, salt & pepper to taste
▢ tomato juice and bone broth ( I don’t have amounts, but adjust to however much soup you’re wanting to have
▢ 1 can black beans
▢ 1 can whole kernel corn
▢ 1 can diced tomatoes
▢ I small can diced chilis
You’ll want the liquid to cover all this very well. You can’t really mess it up.
Cover and cook on high for 3-4 hours or on low for 4-6. When it’s done, shred the chicken. Then ladle into bowls. We like to add Heavy cream or sour cream. Some shredded cheese & tortilla chips.
BBQ Meatballs. ( This is a similar recipe to mine)
4 lb. hamburger
2¾ c. quick oatmeal
3 eggs
¾ c. evaporated milk
⅔ c. milk
¼ c. chopped onion
2 1/4 tsp. salt
¾ tsp. garlic salt
¾ tsp. black pepper
Barbecue Sauce-
¾ Tbsp. lemon juice
¾ tsp. garlic salt
¾ Tbsp. vinegar
2 Tbsp. Worcestershire sauce
1⅓ c. ketchup
½ tsp. liquid smoke
1 c. brown sugar
¼ c. barbecue sauce
Shape into balls and fit tightly in baking pan. Cover with sauce. Bake uncovered for around an hour & a half or less depending how big the meatballs are. Serve and enjoy! I also freeze these and then let them thaw before I bake them. Or bake them and then freeze them and Re-heat.
Chocolate Peanut Butter Dessert
2 Boxes instant pudding. I use vanilla and Chocolate
1 - 8 or 16 oz whipped topping
Peanut Butter crumbs
4 cups crushed grahams
1 cup peanut butter
6 T Butter, melted
3/4 cup brown sugar.
Mix this into crumbs. Then layer pudding, whipped topping & crumbs. Not healthy, but such an easy dessert!
Jalepeño Popper Dip
Use the base of the cream cheese mixture from my recipe, but add another Block of cream cheese and more shredded cheese. And dice up some bacon that is pre-cooked. Add in pickled Jalepeños to taste. I dice them super finely. Then bake this until it’s melted and hot. Yum!
Mashed Potatoes
This recipe is just a bit of a gauge as to how much. It's not specific. Add more or less milk if needed. as well as season to taste
5lb bag of Red Potatoes 1/2 cup butter. 6oz cream cheese 1 cup sour cream
about 1 can evaporated milk (or regular can be used) adjust amount as needed
Add salt & garlic powder also brown some butter for topping after the potatoes are done
Directions: Boil potatoes. This will take a good half hour for sure. Drain completely. Pour into mixer bowl or use a hand mixer. Mash Potatoes, stirring several times. Then add Butter, salt & Garlic . Once whipped, add cream cheese & sour cream. Then begin by slowly adding milk until you reach the desired consistency. Stir and scrape the bowl a few times. Then you're done! Yum!
